Pit cheese

Fossa cheese is a PDO product made according to ancient techniques now strictly certified. A tradition in which the cheese is aged for a minimum of 60 days and then matured in the old medieval pits for a period of about three months. Inside these hermetically sealed pits special conditions are created in the air that give the cheese characteristic and inimitable aromas and flavors.

A cheese with a unique and intense flavor that we recommend to fully enjoy in combination with honey and jams, thus releasing all its potential. Thanks to its flavors you can also try it with first courses, such as passatelli and asparagus or passatelli in broth, but also with truffle-based first courses, where the aromatic notes reach really tasty peaks. We recommend to taste the cheese of fossa together with our truffle honey or jam mirabolani.

Weight: about 350 g – 1.2 kg

Ingredients: pasteurized sheep milk, salt, rennet, lactic ferments vaccines.

Storage: to be stored in the fridge at a temperature of +2C to +6C, store for a maximum of nine months.

Order processing and delivery: orders are processed within 2/3 working days from their receipt; the goods are delivered in 24/48 hours, depending on the destination and the availability of couriers.
