Loin of Marche

the loin of Marche is a typical product of our region. Better known as capocollo, it is a sausage with an unmistakable taste that will make your mouth water. A very popular product typical of the peasant tradition that is soft to the cut but pleasantly dry, fragrant and greedy already to the eye with veins of rosy fat.

The loin is obtained from the boning of the neck of the pig and, through careful processing, is made to mature from 70 to 90 days. Also the aromatization follows very precise steps at the end of which the loin takes on the smells of pepper, garlic, local wines, or fennel. Cut into slices not too thin, perhaps accompanied by a slice of bread, it is already perfect. We recommend trying it together with the crescia puff pastry of Urbino.

Ingredients: pork meat, salt, pepper and garlic.

Storage: to be kept in a cool and dry place, once opened it should be consumed preferably within six months.
