Paccasassi of Conero

The Paccasassi del Conero are one of the most famous typical products of the Marche in the world. This delicious wild fennel grows spontaneously overlooking the sea of Conero and from the first taste emerges the savory taste, iodized, typically aromatic, with strong citrus notes with hints of fennel and carrot. The leaflets are fleshy and succulent and the plant is rich in properties, including vitamin C and omega3.

The use of Paccasassi is truly transversal. Originally this aromatic plant was accompanied by fish dishes, such as sea salads, boiled fish or raw seafood, such as amberjack or tuna. But thanks to its unique flavors, Paccasassi are also excellent in combination with cold cuts, such as mortadella or ciauscolo, pasta, pizza or cheese. A product where nothing is thrown away, not even the oil in which they are stored, since it conveys in the dishes the aroma of this herb, which has the taste of salt.

Ingredients: extra virgin olive oil, sea fennel (crithmum maritimum), wine vinegar and sea salt.

Storage: after opening, store in the refrigerator, preferably before the date indicated in the cap.
