The bianchetto truffle is widespread throughout the Italian peninsula and has characteristics similar to the white truffle because it has a rounded shape and regular with cavities and protrusions, it is smooth and dirty white. It is distinguished from the fine white by its aroma: soft at first, tends to take on tones of garlic later. The scent and taste of bianchetto truffle is less intense and more pungent than white truffle.

Fresh truffle storage: 5/7 days, in the refrigerator (vegetable department), wrapped with Scottex type kitchen paper (it is recommended to change it every day) and stored in an airtight container.

Use of truffle: it is recommended to wash the truffle at the time of its actual use; cut thin slices (with the appropriate slicer) over the hot plate and the heat will release all its flavor.

Intense ruby color, has an important hint of black cherry with notes of banana and spicy cocoa that remains dry on the palate but with a fine aftertaste of bitter almond. The company Morello Austera of Cantiano produces its products using traditional processing methods typical of the territory that leave the nutritional and taste properties unchanged.

This particular wine can be enjoyed with tarts, dry desserts, dark chocolate and blue cheeses served at a temperature of 8-10 ºC. It is also excellent as an aperitif served at a temperature of 4 ºC.
