Ciauscolo

If you think of the Marche one of the first to catch our attention is undoubtedly the ciauscolo. Known by various names, ciauscolo is a salami of the peasant tradition typical of the inner area of the provinces of Ascoli Piceno, Fermo, Ancona and Macerata. The main feature that has made the sausage so famous is its typically soft texture that makes it possible to spread.

With a typically pink colour, it is a rediscovered PGI (protected geographical indication) product that is also used in haute cuisine dishes to give a touch of originality and tradition. Made according to the strict rules of tradition, the original recipe involves the grinding of three noble parts of the pig (bacon, shoulder, trimmings of ham and loin), with the addition of spices such as salt, black pepper, crushed garlic and, in some cases, cooked wine or garlic flavored in wine. We recommend to enjoy it together with our Marche crostolo. A real delight to discover!
