1) The black summer truffle (also called scorzone) resembles the prized black truffle since it is black in color and with numerous and marked warts but it stands out because at the time of cutting the gleba has a hazelnut color with light veins. Aroma and flavor: delicate of mushroom, less elegant than the prized black truffle. It expresses its maximum potential after cooking. This variety can grow to a considerable size.

This truffle is excellent for preparing delicious first courses or for making excellent meat escalopes. Also ideal for preparing excellent croutons.

HARVEST PERIOD: May – August (from 15 April the collection is open in Calaria, Sicily and Sardinia)

> SIZE (weight of each single truffle): FIRST CHOICE 15-50 grams.

Storage: 8/12 days, in the refrigerator (vegetable department), wrapped in kitchen paper such as Scottex (it is advisable to change it every day) and placed in an airtight container.

Use: it is advisable to wash the truffle at the moment of its actual use; cut thin slices (with the special truffle slicer) over the hot dish and the heat will release all its flavor. To best enhance this truffle we recommend cooking it lightly. Just put it in a pan (sliced ​​or julienne) for a few minutes over low heat, along with the other ingredients.

2) The condiment par excellence: truffle butter. It can be used on all dishes, from croutons to meat to give that unique scent of truffles to your dishes. For pasta it can be used as a single condiment or as a base for making truffle sauces. Butter is also perfect for seasoning meats such as roasts or roast beef.

Ingredients: butter, bianchetto truffle (Tuber albidum Pico or Tuber borchii Vitt.), Salt, aroma.

Storage: 4 years from the date of production at room temperature; once opened, store in the fridge covered with extra virgin olive oil and consume in a short time.

Shipping and order confirmation: Shipments of fresh truffles are processed from Monday to Wedneday; the order received by 13.00 will be processed the same day; the order received after 13.00 will be processed the following day. Orders received from Wednesday afternoon to Sunday will be processed on the following Monday: this is to avoid that the packages, due to any delays, remain in the courier depots and jeopardize the conservation of the fresh product. The fresh truffle is brushed, placed in special isothermal containers and delivered in 24/48 hours, depending on the destination and the availability of couriers. Confirmation of availability, the day of processing and shipping will be given upon receipt of the order.
