The refined dark chocolate of Modica (IGP – Protected Geographical Indication) goes well with the truffle of Acqualagna. An excellent combination that delights all palates, even the most demanding. We have decided to surprise you with special effects and we have produced the best TRUFFLE PRALINES, a production of high-quality pastry, all artisanal! The truffle will leave you with a pleasant, delicate and persistent taste in the mouth, without however prevailing over the chocolate. The chocolates are perfect after a meal or as an accompaniment to coffee, bitters or fine liqueurs. The blister contains 145 g net of truffle chocolate: 6 white chocolate pralines and 6 black dark chocolate pralines; the filling is always in Modica dark chocolate.

Ingredients: sugar, vegetable oils (sunflower), low-fat cocoa powder, 10% chocolate (sugar, cocoa mass, low-fat cocoa powder) emulsifier (E322 sunflower lecithin), natural vanilla flavoring, Modica chocolate 38% (mass cocoa 60%, sugar), black summer truffle [(Tuber aestivum Vitt.) 70%, extra virgin olive oil, aroma, salt] 2%, white truffle aroma, surface treated with dark chocolate (mass of cocoa, sugar) and white chocolate (sugar, cocoa butter, milk powder, whey powder, emulsifier: soy lecithin, natural vanilla flavoring) and hazelnut grains.

Soft truffle dressing with white wine vinegar and black summer truffle. Our truffle perlage is tasty on risotto and first courses, excellent on fish and seafood, delicious on aged cheeses and perfect on raw meats (tartare) and roasts.

Ingredients: truffle dressing [concentrated must of white grapes, white wine vinegar, black summer truffle (Tuber asetivum Vitt.) 1%, white truffle aroma], water, thickener (cellulose gum), gelling agents (calcium chloride, sodium alginate), preservative (potassium sorbate). Contains SULFITIES.

The classic Genoese pesto with the addition of our black truffle. Excellent condiment for pasta and bruschetta, it can be served both hot and cold. One of the best known pests in the world with the addition of the highly prized truffle.

Ingredients: basil [basil semi-finished (basil, salt, olive oil, vinegar), extra virgin olive oil] 43,5%, extra virgin olive oil, Parmigiano Reggiano CHEESE, black summer truffle (Tuber aestivum Vitt.) 5%, pine nuts 3,2%, flavourings, acidity regulator: E330.

We added our truffle to the traditional Sicilian pesto and created a condiment that will inebriate your dishes. Pesto with dried tomatoes, almonds, parmesan and truffle. The product is ready to use, perfect for seasoning pasta, simply heat the sauce and toss the pasta in the pan once cooking is complete. Also great for making croutons.

Ingredients: tomato 40%, extra virgin olive oil, dried tomatoes 6,1%, black summer truffle (Tuber aestivum Vitt.) 5%, Parmigiano Reggiano CHEESE, ALMONDS, basil [basil semi-finished (basil, salt, olive oil, vinegar, extra virgin olive oil] 2%, salt, flavourings.

A great classic such as carbonara goes well with the Acqualagna truffle and here is an extraordinary sauce: the carbonara with truffles. The black truffle together with egg, pancetta and pecorino romano (as tradition dictates) are the main ingredients of this sauce. Excellent sauce for pasta, just heat the sauce in a pan and skip the freshly cooked pasta.

Ingredients: CREAM 38%, MILK, superior black truffle juice 10%, bacon, EGG yolk 7%, Parmigiano Reggiano DOP CHEESE, sunflower oil, porck cheek 3,5%, corn starch, Pecorino Romano DOP CHEESE, superior black truffle (Tuber melanosporum Vitt.) 1,5%, moscato truffle (Tuber brumale var. moschatum De Ferry) 1,5%, salt, flavourings, black pepper.

The truffle fondue is a great mix of cheeses (Leerdammer and fontina) and truffles. An excellent cream for preparing hot croutons, but also a perfect sauce for pasta, especially gnocchi or passatelli. We recommend heating it in a pan and adding the pasta once cooked. It can also be used to make the classic cheese fondue with hot croutons.
